Sampling teas from Japan’s many tea growing regions, guests at our Tea Master Green
Tea Shop in Los Angeles often find flavors they prefer. Some like teas that have more
bite and astringency, others prefer the smoothness and drinkability. At the same time,
guests seek out different teas to fit different occasions and moods. Some teas are for
special occasions while others are daily drinkers. Some of our guests enjoy certain teas
more in the morning and others in the afternoon or evening. There are those teas that
are great following a meal and others that are better served on their own time. While we
offer so many teas at Tea Master, our guests have consistently found that Kiri, one of
our premium sencha (煎茶) green teas from Yame (八女) prefecture, is the tea the one
tea that can be served no matter the time, occasion, mood, or taste preference.
It turns out, the staff at Hoshino Tea Garden (星野製茶園) where Kiri is prepared, feel
the same way. Like the early morning fog which often hugs the mountains in
Japan—Kiri means ‘fog’ in Japanese—the staff at Hoshino Tea Garden enjoys Kiri
before starting their workday. Reliably smooth but with enough bitterness to perk up the
senses, Kiri also a fragrant tea that brews an expressively yellow-green liquid in the
cup. Consistently the most popular sencha green tea for the producer and at our store,
for the simple reason that it’s the type of tea that one never grows tires of because of
how well balanced it is. It’s an inviting tea that’s neither too delicate nor too bold to be
served at any and all times. For the same reasons, Kiri is great as an introductory tea
whether to the more umami-tasting teas of Yame, to the category of sencha itself, or
simply to brewed loose-leaf tea overall. The more affordable cousin to the higher-grade
Satsuki, we love to start off all those Japanese tea curious guests with Kiri because it
offers something for everyone.

Our guests have found that our Kiri is a classic sencha in that it’s best when brewed
twice. We’ve found that a first brew of about 80 seconds and a second at half that time
(40 seconds) produces two distinct but delicious infusions. For cold options, we’ve
found that cold-brewing or pouring over ice are both great options, but if you choose the
latter, just brew for about double the time on each infusion. As with all our sencha teas,
we do not recommend adding anything (sweetener or milk) to it.
